SHAPED AND DROP COOKIES
Date Filled Cookies
1 egg
1 c. sugar
1/2 c. shortening
1/2 c. milk
1 tsp. vanilla
1/2 tsp. salt
1 tsp. soda
2 tsp. baking powder
3 1/2 flour (more if necessary to roll)Roll very thin. Cut with cookie cutter. Place filling on half the cookie. Cover with another and press edges closed.
Filling:
1 # dates, cut fine
1/2 c sugar
1/2 c. hot water
Boil until thick and soft. Drop teaspoonful on each cookie. Bake at 350oF for 10 to 15 min.Oatmeal Crispies
1 c. shortening (1/2 oleo, 1/2 lard)
1 1/2 c. flour
1 c. brown sugar
1 tsp. salt
1 c. white sugar
1 tsp. soda
2 well-beaten eggs
3 c. Quick oats
1 tsp. vanilla
1/2 c. chopped nuts
1/2 c. raisinsCream shortening, brown & white sugar. Mix in well beaten eggs and vanilla. Add sifted dry ingredients (flour, salt, and soda). Stir in oatmeal, nuts and raisins. Shape in roll and chill overnight. Slice 1/4" thick and bake on ungreased pan. Bake at 350oF. about 10 min. or little longer. Dough will be quite soft, do not add additional flour.
Southern Tassies
1/2 cup butter
1 3 oz. pkg. Philadelphia Cream Cheese
1 1/2 cup brown sugar (loose)
1 cup flour
Pecans
2 eggs, beaten
2 tbsp. melted butter.Blend first three ingredients well. Press into tart pans. Cut up one pecan in the bottom of each cup. Fill with second mixture that has been beaten together well. Bake in 350o oven for 25 minutes or until brown.
Butterscotch Drops
1 pkg. butterscotch chips
Melt chips and add:
1/2 c. peanut butter
2 1/2 c. corn flakes
1/2 c. nutsDrop with spoon onto waxpaper and let cool.
Cereal Drop Cookies
1 cup oleo
1 cup salad oil
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp. vanilla
3 1/2 cups flour
1 tsp. soda
1 tsp. cream of tartar
1 cup oatmeal
2 cups rice Krispies
1 cup chocolate chips
1 cup nuts, chopped
2 cups coconutMix oleo, sugar and eggs together, add oil and vanilla. Mix well, add remaining ingredients. Drop by spoonfuls on greased cookie sheet. Also good without the chocolate chips. Bake 8-10 minutes at 350o. Makes 8 dozen. Freezes well. Delicious.
Soft Raisin Cookies
1 cup raisins
1/2 cup water
1 tsp. baking soda
1 cup brown sugar
1 cup shortening (2 sticks oleomargarine)
1/2 tsp. salt 2 cups flour
1/2 cup coconut 1 tsp. vanilla
2 eggs 1/2 cup nuts
2 cup quick rolled oatsSimmer raisins in the water, drain, reserving 4 T. of the juice. Add 1 tsp. baking soda to juice and use in cookie dough. Drop by tsp. Bake 12-15 min. at 350o.
Sugar Cookies
1 Cup butter or margarine
1 cup white sugar
1 cup powdered sugar
1 cup mazola oil
2 eggs
1 teaspoon vanilla
1 teaspoon cream of tarter
1 teaspoon baking soda
1/2 teaspoon salt
4 cups flour ( plus 1/4 cup)
Cream shortening, adding other ingredients in order give, form into small balls and flatten with glass dipped in sugar. Bake at 350o for 10 minutes.
Molasses Cookies
3/4 cup shortening
1 cup sugar
1 egg
4 tablespoons Molasses
2 tsp. baking soda
2 1/2 cups flour
1/2 tsp. salt
1 tsp. ginger
1 tsp. cinnamonCream shortening, add sugar, egg and molasses. Mix all dry ingredients, then add to first mixture. Roll in balls size of walnuts, roll in sugar and use glass to flatten and bake on ungreased cookie sheet. Bake at 350o for 10-15 minutes.
Sour Cream Sugar Cookies
1 1/2 cup sugar
2 eggs
scant cup of lard
1 cup sour cream
2 tsp. baking powder
1 tsp. soda
about 4 cups flour
a little vanilla.Cream sugar and lard, beat in eggs, add dry ingredients. (Enough flour to handle well. Less if unsifted.) Drop by teaspoonful on greased floured cookie sheet oven until golden brown.
Rockford Mint Cookies
1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 1/2 cup flour
1 tsp.soda
1/2 tsp.salt
1 tsp. vanilla
1 8 oz. pkg Rockford MintsIf desired, add 1 tsp. burnt sugar flavoring and 1/4 tsp. butter flavoring. (Good)
Mix as usual for cookies. Drop on cookie sheet. Press with sugared glass and press a Rockford Mint in the center of each cookie. bake 350o until lightly browned.Peanut Butter Cookie
1 1/4 cup sifted four
1/2 tsp. salt
1/2 tsp. soda
1/2 cup oleo
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla.Sift flour, salt & soda. Blend oleo and peanut butter. Add sugar gradually mixing until creamy. Add egg and vanilla & beat until fluffy. Stir in flour. Form in 1" balls. Place on greased baking sheet. Press flat with a fork/criss-crossed. Bake in a 350o oven for 12 to 15 minutes.
Unbaked `Hamburger' Cookies
3 cups quick oats
2 Tbsp. cocoa
1/2 cup coconut
1/2 cup nuts
2 cups sugar
1/8 tsp. salt
1/2 cup butter
1/2 cup milk
1 tsp. VanillaBoil sugar, salt, butter, milk for 1 minute. Pour over first mixture. Drop on waxpaper.
"K" Cookies
1/2 cup white corn syrup
1/2 cup sugar
3/4 cup peanut butter
3 cups K breakfast cereal
1/2 tsp. vanillaBring sugar and syrup to boil. Blend in peanut butter and vanilla. Add K cereal. Drop by teaspoonfuls on waxed paper. Let cool.
Cooked cookies - dried fruit
(Aunt Olive's recipe)2 eggs
1 cup sugar
l lump of butter
1 cup chopped dried fruit dates, raisins, figs, or suchCook over slow heat stirring in fruit. When begins to stick, add 2 cups flake cereal. Roll in coconut. Cool on waxed paper.
2) Line a loaf tin with wax paper put each of the 3 parts on top of each other.3) Let stand over night in the refrigerator.
4) Next morning cut into thin slices and bake at 350o for 10 minutes.
