MEATS AND CASSEROLES
 

 Salmon Noodle Delight

1 can Cream of chicken soup
1 soup can water
2 cups wide Romanoff noodles
1 small onion, chopped
3 oz. can of salmon
1 (3 oz) can chicken
1/4 tsp celery flakes
1/2 cup cottage cheese
1 tsp. salt
1/2 cup sour cream
1 Tbsp. Worcestershire sauce

Bring soup and water to a boil and drop in noodles, onion, and celery flakes.  Cook until tender.  Stir in salmon, cottage cheese, sour cream, and Worcestershire sauce and turn into greased casserole dish.  Top with slices of Cheddar Cheese and bake until cheese topping is melted. (Can use microwave or regular oven).

This can also be made with a large can of salmon and omit the chicken.  Dried onion can be substituted for fresh onion.

 Ham and Broccoli Casserole

1 Pkg (10 oz.) Broccoli or 1 # fresh broccoli
1/2 cup grated cheddar cheese
2 Tbsp. chopped green pepper
4 Hard cooked eggs, peeled &   chopped
2 Tbsp. chopped onion
1 Tbsp. chopped fresh parsley
1 C. cubed cooked Ham
1 Tbsp Lemon juice
4 Tbsp. tapioca
3/4 c. Light Cream or evap. milk
1 can mushrooms

Topping:

1 c. soft bread crumbs
2 Tbsp. butter, melted.

On stove top or in a microwave oven, blanch broccoli cuts in covered dish for 3 min; drain. In a 2 1/2 qt. baking dish, combine broccoli, eggs and ham, sprinkle tapioca evenly over all.  Add the cheese, green pepper,onion, and parsley; mix gently.  In a small bowl, blend the lemon juice, cream and mushrooms; add to casserole and mix thoroughly.  mix topping ingredients, sprinkle over top of casserole. Bake at 375o for 25-30 min.  Let stand a few minutes before serving.

 Chicken Macaroni Casserole

2 Cups chicken
2 cups uncooked macaroni
2 cups mushroom soup or 2 cans mushroom soup
2 cans milk
1 medium grated onion
1 can cheddar cheese soup

Mix thoroughly, store in refrigerator overnight.  Bake one hour at 325o  oven. If short on meat, add 3 or 4 cooked chopped eggs.

 Hamburger/Cabbage Casserole

1 1/2 lb. hamburger
1 onion
1 large head cabbage
2 cans tomato soup
1 can of low fat milk

Serves six.

Steam hamburger and onion.  Shred cabbage.  Make layers in 2 quart casserole dish with hamburger mixture and cabbage. Pour soup diluted with milk over top.  Bake at 350* until done.  Usually 30-45 minutes. (1 1/2 cup = 125 calories.)

 Hamballs

1 lb. ground ham
1 lb. ground beef
1 cup milk
2 cups cracker crumbs
1/2 cup brown sugar
1/2 cup water
1/2 cup vinegar (not too strong)
1 Tbsp. peanut butter
1 tsp. Worcestershire sauce

Mix first four ingredients thoroughly.  Make into balls of desired size.  Place in casserole and cover with sauce. (I heat sauce in saucepan first to melt peanut butter and dissolve sugar.)


 Bake in moderate oven 375o  for one hour or until balls are red and sauce is almost absorbed.

Variation:  We also like to add a little pineapple juice or other fruit juice  to the sauce for variety.

                       Lo-Cal Crusty Baked Chicken

1/3 cup plain yogurt
1/2 cup dried bread crumbs
1/4 tsp. salt
1/8 tsp. ground ginger
1/8 tsp. cayenne pepper
4 tsp. salad oil

2 whole medium chicken breasts, halved skinned.  Oven: 400o  for 20 minutes.  Turn and bake 25 minutes longer.  265 calories per serving

 Swedish Meatballs

6 lb. ground ham
6 lb. ground beef
6 cup milk
12 cups cracker crumbs
3 cups brown sugar
3 cups vinegar (Not too strong)
6 Tbsp. peanut butter
1 tsp. Worcestershire sauce

Mix first four ingredients in a 12 quart bowl or larger if you have one.  Form into meat balls.  Place in roaster pan and pour sauce over top.  Bake in  moderate oven 375o until balls are red and sauce is almost absorbed.  Best to layer in shallow pans in single layers if possible to allow for turning during baking.  Can cook and freeze and reheat in microwave as needed. YUMMY! May need to add a bit of water.

 Hamburger and Corn Casserole

1 1/2 lbs. ground chuck
1 cupped chopped onions
1 12 oz. can whole corn, drained
1 can condensed cream chicken soup
1 can cream of mushroom soup
1 cup dairy sour cream
1/4 cup chopped Pimento
3/4 tsp. salt
1/4 tsp. pepper
3 cups medium noodles
1 cup soft bread crumbs
3 tbsp. melted butter

1) Brown meat with onions until tender, but not to brown, Drain. Add next 8 ingredients. Stir in cooked  noodles, mix crumbs with butter. Sprinkle over top. Place in a greased casserole dish. Bake 30 to 45 minutes, at 350o

 Scalloped Potatoes

Sliced Potatoes
Onion
Flour
salt
pepper
1 can mushroom soup
1 cup milk, approx.
ham pieces
cheese slices

Layer onions and potatoes in a 9 x 13 pan or dish.  Sprinkle flour, salt, and  pepper and pieces of ham between layers. Dilute mushroom soup with milk and pour over top.  Bake in 400o oven for about 30 minutes and top with cheese slices or pieces and continue baking until potatoes are tender and cheese is melted and lightly browned.

Best Ever Macaroni and Cheese





2 cups uncooked macaroni
2 quarts water
1/2 cup longhorn or cheddar cheese
1/4 cup Mozzarella cheese
1/4 cup Swiss Cheese
1/4 lb. Oleo
1/3 cup flour
1 cup milk or more if needed

Cook macaroni in water until tender.  Drain in colander.  In saucepan melt oleomargarine and stir in flour.  When well blended, add milk and chopped cheese bits and cook until thickened.  Pour over macaroni and place in a well  greased casserole dish.  Top with more bits and pieces of cheese.  Bake in a 375o  oven until lightly browned on top.

Cheeses can vary in quantities and varieties, but keep the milder flavored cheeses dominate and add others as enhancements.  Extra good!
