Some salads have their own dressings so the dressing recipe is listed with the appropriate salad recipe.  The salad
dressing section has a number of homemade salad dressings that aren't necessarily linked with a particular salad.

Cauliflower Salad
(Dianne Foor)

2 c. raw cauliflower
2 c  broccoli
1/2 c. celery chopped
1/2 c. onion chopped
1/2 c. Mozarelli Cheeese shredded
2 c.  Miracle Whip
Scant 1/3 cup sugar
a little salt

Cauliflower Salad

2 cups cauliflower (raw) cut into cubes
1 Tbsp. grated onion
1 Tbsp. grated carrot
1/4 c. cheese, cubed

Ceasar Seven Seas Italian Dressing. Mix altogether & chill before serving.

 
Sweet/Sour Cauliflower Salad

1 8 oz. can pineapple chunks
1 small head cauliflower
1 tsp. sugar
1/2 tsp. dry mustard
1/2 tsp. salt
dash pepper
1/4 cup dark seedless raisins.

 Cauliflower Salad

1 head lettuce washed
1 small head cauliflower
1 onion
bacon, cooked and crumbled up
1/4 cup sugar
1 cup mayonnaise
1/3 cup parmesan cheese

Layer and leave set over night.

 
Copper Penny Salad

5 c. cooked sliced carrots
1 Medium onion sliced
1 small green pepper sliced
1 can tomato soup
1/s c. salad oil
3/4 c.sugar
3/4c. vinegar
1 tsp. prepared mustard
1 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. pepper.

 
Cranberry Pineapple Salad

1 lb. raw cranberries ground (coarse blade of grinder)
2 cups sugar
1 - 9 oz. can crushed pineapple
1 pkg marshmallows, cut up
   or 1/2 pkg. small marshmallows.
Let stand overnight in refrigerator

1/2 pt. whipped cream.  Fold in and pour into glass dish.  Let stand 24 hours (in refrigerator)

 
Cranberry Relish

1 lb cranberries, grind, medium.
1 whole orange and peeling
1 whole apple and peeling
2 tsp. liquid sweetner

Grind fruit. Mix all together and store in refrigerator.
 

Cream Cheese Salad

1 box lemon jello
2 cups boiling water
12 marshmallows (cup up)
1 3 oz. pkg. Philadelphia Cream Cheese (room temperature)
1 small can crushed pineapple
1 cup Cool Whip.

Mix marshmallows and cheese in boiling water with jello.  Chill until fairly   well congealed, add pineapple
and Cool Whip.

 
Cucumbers with Sour Cream

2 large cucumbers washed & dried
1 1/2 c.dairy sour cream
1 Tbsp. vinegar
salt
pepper
1/4 c. chopped chives or  green onions

Run tines of fork down sides of cucumber & slice thin. Combine remaining ingredients in bowl and toss gently
with cucumbers. Chill before serving
.

 

Cucumber Pineapple Salad
 
1 pkg. lemon gelatin
1 3/4 c. liquid (water & Juice)
1/2 tsp. pineapple flavoring
1 c. crushed pineapple
2 large cucumbers peeled & diced fine
1/4 c. salad dressing
1/2 pt. dairy sour cream

Dissolve gelatin in 1 c. boiling water. Add remaining liquid. chlll until starts to congeal, then fold in cucumbers,
pineapple, salad dressing and sour cream. Chill until firm. Unmold on lettuce.

 

Emerald Green Salad
Cucumber/pineapple

Dissolve:

1 - 3 oz. box Lime Jello
      in   ½ cup boiling water

Chop:

1 med. unpeeled cucumber  (I use a coarse grater for mine)
1 med. onion
½ small jar pimentos  (optional)

Add:

1 cup or 1sm. carton cottage cheese
1 cup mayonnaise  (I blend this with the jello to make it smoother.)
nuts (optional)  I always use slivered almonds for crunch!)    Chill until set.

 

Frozen Dessert

1 pkg. Philadelphia Cream Cheese
Maraschino cherries red & green
nuts
1 can crused pineapple
Mix all together and fold in -
1 cup whipped cream
 

Frozen Dessert
(Aunt Frances)

1 quart Cool Whip
 1 can Eagle Brand Milk
 1 cup crushed pineapple
 1 can cherry pie filling
  Mix and Freeze in an 8 or 9 inch pan
 

 

Macaroni Salad

2 cups macaroni (shell)
2 cups celery
1 cup olives
1 cup velveeta cheese
1 cup green peppers
1 medium onion
3 Tomatoes

Dressing:

1 cup oil
1 cup catsup
1 cup sugar
1/3 cup vinegar
1 tsp. salt
1 tsp. celery seed
1/4 tsp. garlic powder

Cook macaroni in three quarts boiling water.  Drain and cool.  Add chopped vegetables, cheese, and olives. 
Mix dressing ingredients and pour over macaroni and vegetables to marinate.

 Perfection Salad
 

1/4 c. Cold Water
1 cup hot water
1/4 c. sugar
1 Tbsp. lemon juice
1/2 t. salt
1 c. celery
1/c cabbage shredded
1 envelope Knox gelatin

Soften gelatin in cold water. Add suar, salt, and hot water and stir until dissolved. Add vinegar & lemon juice. 
Cool & when mixture begins to stiffin add remaining ingredients.

 

Potato Salad

Boil 6 medium size potatoes.  Cut up when cool enough to handle.  Pour the following over the cut up potatoes
and let marinate for several hours or overnight in refrigerator:

1/4 c. salad oil
2 T. sugar
1/8 c. vinegar
1 tsp. salad mustard
onion (cut up)
salt to taste
pepper (if desired)

Just before serving, add Miracle Whip and 3 or 4 hard cooked eggs.
 
 

Ramen Salad
Cindy's recipe

4 oz. sunflower seed
4 oz. almonds
2 pkgs cabbage mix or 1 head each red & green cabbage
2 pkgs ramen noodles
6 green onions, chopped
1 c. sugar
1 c. sunflower oil
1/2 c. tarragon vinegar
2 Tbsp. soy sauce
 

 Sauerkraut Salad

1 (No. 2 1/2) can sauerkraut

Boil in scant 1 1/2 quarts of water for 10 minutes.  Drain and cool.  Add:

1 c. celery (chopped)
1/2 onion (chopped)
1/2 green pepper, chopped

Mix and heat the following until sugar is dissolved:

1 c. sugar
1/2 c. salad oil.

Pour over kraut and vegetables.  Refrigerate several hours or overnight.  Keeps indefinitely.

 Watergate Salad

Mix---1 large can (20 oz) crushed pineapple
          1 pkg. instant pistachio pudding mix  (dry)
      This will thicken in 3 to 5 minutes.
Add---1 cup Mini-marshmallows
           1   8-oz container of Cool Whip
           ½ cup chopped pecans
Mix well.  Chill in refrigerator.
        Quick---easy----delicious!
 

SALAD DRESSINGS
 
Buttercup Salad Dressing

1/3 c. sugar
1 tsp. salt
1/8 tsp. pepper
 5-6 egg yolks
3 Tbsp. flour
2 tsp. prepared mustard or 1 tsp.dry mustard
 2/3 c. vinegar
 1 1/3 c. water
 1 Tbsp. butter
  1/2 c. whipped whipping cream

Combine sugar, salt, pepper & flour. Add egg yolks and beat well. Add mustard, vinegar & water.

Cook in heavy saucepan 2-3 min. or until thickened, stirring constantly. Add butter stirring until butter melts.
Cool. Fold in whipped cream. Cover & store in refrigerator. Makes 3 c. salad dressing

 
 Cooked Salad Dressing #1

3/4 c. sugar
1 c. milk
2 Tbsp. flour
pinch of salt
3 eggs
1 tsp. dry mustard
1/2 c. vinegar
1 Tsp. butter
 

Mix 1/2 c vinegar and tsp. of butter and heat.  Add milk and rest of ingredients and boil until thick.  Refrigerate
until needed.  Add 1/2 c. Miracle Whip salad dressing with this when ready to make potato salad.

 
 Cooked Salad Dressing #2

2 Tbsp. corn starch
6 egg yolks
1 c. sugar
1 c. vinegar
1 Tbsp. dry mustard
2 c. water
1 tsp. salt

Mix sugar, corn starch, mustard, salt and egg yolks (beaten) with vinegar.  Cook slowly with water, stirring as it
thickens.  Remove from heat and beat until smooth.  Use a tablespoon of cream to about 1 cup of dressing for
potato or macaroni salad.

 
 Best Ever Dressing

1 c. sugar
1 tsp. paprika
1 c. salad oil
1 tsp. celery seed
1 c. vinegar
1 tsp. salt
1 c. catsup
1/4 tsp. poppy seed
1/4 c. dried minced onion
1/4 tsp. white pepper

Put in blender or shake together in a jar.  Store in refrigerator until ready to use.  Especially good on lettuce salads.

 
French Dressing

1 c. oil
1 c. catsup
1 c. sugar
1/3 c. vinegar
1 tsp. salt
1 tsp. celery seed
1/4 tsp. garlic powder
1 tsp. paprika

Combine dry ingredients in a jar. Add vinegar to dry ingredients.  Add oil and shake vigorously. Chill and
shake again before using

 
Cooked Salad Dressing
(Home Ec days)
 
1/4 t. dry or prepared mustard
1 t. salt
3 Tbsp.  sugar
1 1/2 Tbsp. flour
Few Grains pepper
1 egg or 2 egg yolks
3/4 c. milk
1 Tbsp. butter
4 Tbsp. Vinegar or lemon juice

Combine dry ingredients and mix thoroughly. Add egg to dry ingredients and beat well. Add  milk mixing well. 
Add  vinegar slowly, beating constantly.  Cook over boiling water stirring constantly until thick. Remove from
fire and add butter. Pour into glass container. Cover, cool and store in refrigerator

 

Mother's Salad Dressing
(very good)

1 beaten egg
1/2 c. vinegar
1/2 c. cream
1 T. flour
1 T. sugar
salt and pepper to taste and a little mustard.

Cook until thick.

 

Mock Sour Cream

1 c. cottage cheese
3 T. skimmed milk
2 Tbsp. lemon juice

Blend in mixer or blender.  Use in place of dairy sour cream.  May be stored in refrigerator.  If too thick, add
1 tsp. cream.
