Cite Your Sources : A Manual for Documenting Family Histories and Genealogical Records, edited by Richard S. Lackey
I have reviewed this book personally in my local bookstore and recommend it based on its thorough treatment of nearly every type of document you'll find, from census records, to oral history recordings, interviews to your grandmother's old notes in the attic -- an excellent source!  The only drawback is that it was printed before the age of online genealogy, so there is nothing in it about citing online sources.  However, it can't be beat for what it is!
