Whole-Wheat Banana Bread 1 1/2 cups flour 2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 1 cup whole-wheat flour 1 cup mashed bananas 1/4 cup buttermilk 1/4 cup shortening 1/2 cup brown sugar 1 egg slightly beaten Sift flour; measure; add baking powder; soda and salt; sift again and add whole-wheat flour; mix well. Combine bananas with buttermilk. Cream shortening; add sugar gradually; continue beating until light and fluffy. Add egg and mix until smooth. Add dry ingredients alternately with banana mixture; stirring just enough to combine. Do not beat. Turn into a greased loaf pan (about 9 1/2 by 5 1/2 inches) and bake in a moderate oven, 350°about 1 hour.
