Zucchini Bread Mix in a bowl: 5 beaten eggs 1 1/2 cups oil 3 cups brown sugar 3 cups ground zucchini 3 tsp vanilla Add flour mixture: 4 1/2 cups whole wheat flour 1 1/2 tsp baking soda 3/4 tsp salt 3/8 tsp baking powder 4 1/2 tsp cinnamon 3/4 cup chopped nuts (optional) Pour into 2 greased loaf pans. Bake at 325° for about 60 minutes. Cool for about 10 minutes, remove from pans and finish cooling on wire racks.
